Turmeric Lentil Soup with Coconut Milk- recipe
- 2 apples (cored and grated)
- 1 1/2 cup of coconut milk
- 2 cups of lentils (red)
- 1 onion(chopped nicely)
- 1 teaspoon of coconut oil
- 1 teaspoon of cumin
- 1 teaspoon of turmeric powder
- 1 1/2 teaspoon of cinnamon
- 1 teaspoon of salt
- 2 to 3 cups of hot water
Start with washing the red lentils with cold water. Next, drain them, and melt the coconut oil in a pot. Then, sauté the onions in it till they get soft and golden.
Now, put the apples and the turmeric in a pot, and cook them for 2 minutes. You need to stir frequently, and then add the water and the lentils. Boil the mix, cover the pot, and then simmer for additional 15 minutes.
After the 15 minutes, add the coconut milk and the spices, and simmer till the red lentils become soft. If you like the soup to be thinner you can include a cup of water in it, and leave it to simmer for 2 hours.
