“Baking actually requires a lot of full attention,” says Pincus. “You have to measure, focus physically on rolling out dough. If you’re focusing on smell and taste, on being present with what you’re creating, that act of mindfulness in that present moment can also have a result in stress reduction.”

Hence, you should try the following delicious recipe with your family, the coconut lime bread. It is very tasty satisfying your pleasure senses, and not very difficult to prepare. Here it is the recipe:
The Coconut Lime Bread Free of Gluten and Dairy
- 2 eggs (kept at ambient temperature)
- 1 ¼ cup almond flour, nicely ground
- 1/3 cup coconut flour
- ¾ cup of tapioca starch
- 1 1/4 cups of coconut milk
- 3 limes (their zest)
- 6 tablespoons of melted coconut oil
- 1 1/2 cups flaked coconut
- 1 cup of coconut sugar
- ¼ teaspoon of salt
- 2 teaspoons of baking powder
- 1 teaspoon of ground cinnamon
- 2 teaspoons of vanilla extract
First, you need to preheat the oven to 350 degrees Fahrenheit. Meanwhile, in a medium bowl mix the coconut milk, eggs, vanilla extract, and lime zest. Once well combined leave it aside.
The next step is mixing the dry ingredients, the almond flour, tapioca starch, coconut sugar, flaked coconut, baking powder, salt, and cinnamon by using a mixer on low speed. Then add the egg mixture and mix everything once again. Next, include the coconut oil, and continue mixing.
Grease a 9 x 5 loaf pan with coconut oil, and in it put the resulting batter. Put it in the oven and bake for 60 to 75 minutes. Once ready set it aside and prepare the lime glaze.
Needed Ingredients for the Lime Glaze
- 2 to 3 tablespoons of freshly squeezed lime juice
- A cup of powdered sugar
- 1/3 lime, using its zest
Take a smaller bowl and in it combine the lime juice and powdered sugar. The resulting mixture drizzle it over the bread. In the end, sprinkle it with lime zest, and your lovely bread is ready for consumption!
