Coconut Lime Bread (Gluten & Dairy Free)

The coronavirus pandemic forced us to stay at home with our loved ones which at some point is not a bad thing. We have plenty of time and in order to make the quarantine bearable now is the perfect time to start cooking. Trying some delicious recipes that are at the same time healthy will efficiently fulfill our free time.

The scent of baking is adorable in our home and every family member loves it, and if you have children this would be the perfect fun time spent together.

Baking can bring many benefits for your mind according to Donna Pincus, associate professor of psychological and brain sciences at Boston University. She states that baking reduces stress and helps people to express themselves creatively.

Pincus explains:

“Baking actually requires a lot of full attention,” says Pincus. “You have to measure, focus physically on rolling out dough. If you’re focusing on smell and taste, on being present with what you’re creating, that act of mindfulness in that present moment can also have a result in stress reduction.”

In fact, any activity that is simple and repetitive and captivates our whole attention reveals calming, and meditative effects. According to conducted studies cooking stimulates the senses, and increases feel-good endorphins, and that makes it a powerful therapeutic activity that stimulates our mindset.

Baking boosts your altruistic nature:

“Baking for others can increase a feeling of wellbeing, contribute to stress relief and make you feel like you’ve done something good for the world, which perhaps increases your meaning in life and connection with other people.”

In addition to this, Julie Ohana, a licensed clinical social worker and culinary art therapist, states the following:

“In many cultures, in many countries, food really is an expression of love, and it’s actually beautiful because it’s something we really all relate to. I think it could border on an unhealthy issue when it replaces communication in the traditional sense, but if it’s done along with communication, it is absolutely a positive and really wonderful thing.”

Hence, you should try the following delicious recipe with your family, the coconut lime bread. It is very tasty satisfying your pleasure senses, and not very difficult to prepare. Here it is the recipe:
