Recipe for Carrot Cake Muffins with Cheesecake Fillings

Needed Ingredients For the Carrot Cake Muffins:

  • 1 cup of grated carrots (app. 2 to 3 medium carrots)
  • 2 large eggs
  • 2 1/4 cups of flour, all-purpose
  • 3/4 cup of water
  • 3/4 teaspoon salt
  • Half a cup of granulated sugar
  • A quarter cup of light brown sugar
  • 1/3 cup of vegetable oil
  • 1 1/2 teaspoons baking powder
  • A quarter teaspoon of baking soda
  • 1 1/2 teaspoons of ground cinnamon
  • 3/4 teaspoon of ground ginger
  • A large bowl
  • A cupcake pan

Needed Ingredients For the Cream Cheese Filling:

  • 10 ounce cream cheese, softened
  • A quarter cup and 1 tablespoon of sugar
  • Half a teaspoon of vanilla
  • A bowl

Needed Ingredients For the Streusel Topping:

  • A cup of flour, all-purpose
  • Half a cup of unsalted butter, melted
  • A quarter teaspoon of salt
  • 2/3 cup of granulated sugar
  • 1 teaspoon of cinnamon
  • A medium bowl

Needed Ingredients For the Glaze:

  • A quarter cup of powdered sugar
  • 1 teaspoon of milk


Take the cupcake pan and line it with paper liners. Preheat the oven to 400°F.

First you need to prepare the streusel topping: combine the all-purpose flour, salt, sugar and the cinnamon. Next, include the melted unsalted butter, and stir everything nicely by using a fork.

In a separate bowl, beat the listed ingredients for the cream cheese filling.

The batter for the muffins is made by first mixing the dry ingredients in a large bowl. In another bowl whisk the water, eggs, and oil, and then the resulting mixture add to the dry ingredients. In the end include the grated carrots, and stir everything once again.

In the cupcake pan in each hole put around 1 1/2-2 tablespoons of the batter, and spread it nicely so that it covers the bottom. Next, put a full tablespoon of filling in each cup. Again put batter to cover the filling. The cups should be 3/4 full, and on top of each cup add the streusel topping.

Put the pan in the oven and bake for 20 minutes. Once baked, remove the pan from the oven, and set it aside to cool down. After that, put the muffins on a cooling rack.

Prepare the glaze by combining the milk with the powdered sugar and then use it to drizzle it over the muffins.
