Recipe of Peanut Butter Granola Cups – Non Baked
2 ½ cups granola
A cup of peanuts, chopped
3 tablespoons of natural peanut butter or almond butter
3 tablespoons of honey or maple syrup
Take a bowl and in it combine the granola, chopped peanuts, peanut butter, and honey or if you prefer, the maple syrup. If the mixture is too dry just add more honey. Put the resulting mixture in a greased cupcake pan, and once the mixture is in each cup mold, press it well against the sides and bottom of the pan so that to create a dent in the center. As such put the pan in the freezer for 5 to 10 minutes.
Now, prepare the filling, and for that purpose you need to melt the peanut butter and pour it into the center of the granola cups. Again place the pan in the freezer for additional 5 to 10 minutes.
All is left is the topping, so melt the dark chocolate and coconut oil, and spoon it on top of the peanut butter. Put it in the fridge to cool off so that the chocolate becomes firm. Keep your cups in an air-tight container in the fridge.
