Spinach and Feta Quiche with Sweet Potato Crust

This meal is believed to be French and it was invented in the 1920s in Alsace-Lorraine. It is a delicious mixture of eggs, cream, and cheese, and can be easily combined with meat, fish, or vegetables, and the whole mixture is surrounded by a shell made of tasty pastry dough.

Recipe of Spinach and Feta Quiche with Sweet Potato Crust

Needed Ingredients:

  • 2 sweet potatoes (medium size)

  • Avocado oil

  • 4 eggs (large)

  • 2 egg whites (large)

  • Half a cup of red onion, sliced

  • 1 (5-oz.) bag of fresh baby spinach

  • Half a cup of whole milk

  • A quarter teaspoon of kosher salt

  • A quarter teaspoon of black pepper, freshly ground

  • A quarter teaspoon of red pepper, crushed

  • 1.5 ounces or 1/3 cup of crumbled feta cheese

Method of Preparation:

First you need to preheat the oven to 350°F. Prepare the sweet potatoes by peeling them and cutting them into 1/8-inch-thick slices. Next, grease a 9-inch pie plate with avocado oil, and on its bottom and sides of the plate lay the slices of sweet potatoes so that they are slightly overlapping. Once properly laid brush the potato slices with avocado oil, and bake for 20 minutes. Remove them from the oven and set the plate on a wire rack to cool off.

Turn on the oven at a temperature of 375°F. Meanwhile place the onion slices in a large nonstick skillet over medium heat with a teaspoon of avocado oil and sauté for 3 minutes. Then, include the spinach and sauté for additional 3 minutes. Turn off the heat and set it aside to cool off.

Now, in a medium bowl, nicely combine the eggs, egg whites, milk, salt, black pepper, and red pepper. Place the spinach mixture onto the cooled sweet potato crust, and then pour over it the egg mixture, and in the end sprinkle feta on top of it.

Bake this meal at 375°F for 35 minutes, and after that period remove it from the oven and let it stand for 5 minutes. Now, this amazing meal is ready to serve!

Additional Tips:

If you want to have a dairy-free meal you can use unsweetened almond milk instead of regular milk. The feta cheese can be easily replaced with vegan feta cheese mix or kalamata olives.
