Super Delicious Lavender Cupcakes with Honey Cream Cheese Frosting

It contains lavender, known for its anti-inflammatory and calming effects. The content of honey enhances the taste and offers the needed sweetness and because of that it is less on sugar.

Lavender Cupcakes with Cream Cheese Frosting

Required Ingredients for the cake:

  • 2 eggs
  • 1 3/4 cup of all-purpose flour
  • 1 1/2 tablespoons of baking powder
  • Half a cup of butter, kept at room temperature
  • 2 tablespoons of dried lavender
  • 1 cup of sugar
  • Half a tablespoon of salt
  • A quarter cup of honey
  • 1 teaspoon of vanilla
  • 2/3 cup of milk

Preparation:

Preheat the oven to 350°F.

In a medium bowl mix the all-purpose flour, the baking powder, salt, and lavender. In another larger bowl beat the butter for 30 seconds with an electric mixer on medium-high speed.  Next, beat the honey, vanilla, and sugar in a separate bowl. Once they are well combined include one egg at a time meanwhile mixing everything. Now include the mixture of the dry ingredients and then the milk to the butter mixture and alternate between the two. Beat the batter on low speed after each addition and continue till everything is nicely combined.

Put the batter spoon by spoon into the lined muffin tins so that they are around half full. Place them in the oven and bake for 16 to 18 minutes.

In order to be sure that they are properly baked stick a toothpick into a cupcake and if it comes out clean, then they are baked. Set them aside and do not remove the cupcakes from the muffin tin for the next 10 minutes. After that period of time, remove them from the muffin tins and place them on wire racks to completely cool off.

Now, prepare the frosting:

Required Ingredients for the frosting:

  • 8 oz cream cheese , kept at room temperature
  • 2 tablespoons of butter, kept at room temperature
  • 3 cups of powdered sugar
  • A quarter cup of honey
  • Half a teaspoon of vanilla

Preparation:

In large bowl combine the cream cheese, honey, vanilla, and butter by using a mixer on medium speed. Once the mixture is fluffy and light, stop the mixing. Include one cup of the powdered sugar and start mixing everything again. Add the rest of the powdered sugar and beat the mixture till you obtain the needed consistency for spreading. Dip the cupcakes in the frosting, but remember to be completely cooled.

For a decoration you can sprinkle some lavender on top of your cupcakes.
